La trifecta: huevos, frijoles, arroz. Days 11-14.

Day 11. Espagueti rojo con salsa de nopales. Red spaghetti with cactus salsa. Campeche, Mexico. The little brown bits on the spaghetti are soy protein nuggets -what a vegetarian oasis this was in Mexico! 

Day 12. Mollete con queso y frijoles. Sandwich with cheese and beans. Campeche, Mexico.

Day 13. Sopa de frijoles negros. Black bean soup. El Panchan, Palenque, Mexico. I’ve had black bean soup before, but never like this – in a hippy village in the jungle of Palenque, with live rumba music and howler monkeys echoing in the trees.

Day 14. Tacos de huevos. Egg tacos. From a street vendor in Palenque, Mexico. A rare treat! Typically the taco stands in the street only sell meat tacos. These came with a hardboiled egg, pickled cabbage, pickled onions and salsa. Delicioso!
