Chiapas Tastings: Days 15-19

Day 15. Un picnic con tortillas, queso doble crema, chicharrón y posh. Picnic with tortillas, double cream cheese (the new food), cured pork bits and posh (liquor made from corn). San Juan Chamula, Chiapas.  I didn’t try the pork, but the cheese was sweet and soft, and the posh was a lot like tequila, taken with lime and salt.

Day 16. Coliflores rellenos. Cheese stuffed cauliflower. San Cristobal, Mexico.

Day 17. Platano asado. Sweet plantain, carmelized and roasted in a pushcart chimney. En la calle, San Cristobal, Chiapas, Mexico.

Day 18. Quesadilla de flores de calabaza. Squash blossom quesadilla. Lagunas de Montebello, Chiapas, Mexico. See another post on this quesadilla.

Day 19. Tecate con chile, sal y limon. The best Tecate I’ve ever tasted with chile, salt and lemon. All the better after a steep hike to the top of a series of 15 cascading waterfalls. El Chiflón, Chiapas, Mexico.
